Chunky mashed potatoes

Yield 6-8 servings

Ingredients

  • 3 pounds red-skinned potatoes
  • 2 tablespoons butter
  • 2/3 cup sour cream
  • 1 clove garlic, minced
  • 4 whole green onions, sliced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Scrub potatoes under running water, removing dirt. Do not peel.
  2. Cut the potatoes into 1-inch cubes.
  3. Place the diced potatoes in a large pot and cover with cold water.
  4. Set the pot over high heat and bring water to a boil. Boil for 15 minutes or until the potatoes are very tender when pierced with a fork.
  5. Drain potatoes in a colander and return them to the pot.
  6. Add the butter, sour cream, garlic, green onions, salt and freshly cracked black pepper.
  7. With a potato masher, mash ingredients together. Taste the potatoes and adjust the seasoning.
  8. Cover pot and keep warm until ready to serve.
