My mom used to make easy truffles every holiday season, and to this day I still adore them.

We always called them “easy truffles” because we didn’t have to dip the whole truffle in melted chocolate at the end. These truffles remind me of something my mother would have made but with a grown up bourbon twist.

I, of course, opted for simply rolling them crushed pecans, but if you’re up for the challenge they would be great dipped in melted chocolate.

Makes 50 truffles.

Chocolate bourbon pecan pie truffles

Ingredients

  • 2-1/2 cups chocolate cookie crumbs
  • 1/2 cup powdered sugar
  • 2 cups pecans, finely chopped (divided)
  • 6 ounces dark chocolate, melted
  • 1/2 cup bourbon
  • 3 tablespoons dark corn syrup

Instructions

  1. In a large mixing bowl add chocolate cookie crumbs, powdered sugar and 1 cup
  2. chopped pecans.
  3. Pour in melted chocolate, bourbon and corn syrup. Mix together to fully incorporate.
  4. Let the mixture rest at room temperature for 30 minutes.
  5. Once the mixture has rested prepare an area with a large piece of wax or parchment
  6. paper.
  7. Roll the mixture into 2 inch size balls and roll into remaining chopped pecans. You
  8. can also roll your balls into sanding sugar, cocoa powder or powdered sugar if
  9. desired.
