Chocolate bourbon pecan pie truffles

Ingredients
- 2-1/2 cups chocolate cookie crumbs
- 1/2 cup powdered sugar
- 2 cups pecans, finely chopped (divided)
- 6 ounces dark chocolate, melted
- 1/2 cup bourbon
- 3 tablespoons dark corn syrup
Instructions
- In a large mixing bowl add chocolate cookie crumbs, powdered sugar and 1 cup
- chopped pecans.
- Pour in melted chocolate, bourbon and corn syrup. Mix together to fully incorporate.
- Let the mixture rest at room temperature for 30 minutes.
- Once the mixture has rested prepare an area with a large piece of wax or parchment
- paper.
- Roll the mixture into 2 inch size balls and roll into remaining chopped pecans. You
- can also roll your balls into sanding sugar, cocoa powder or powdered sugar if
- desired.
