Give your Thanksgiving potatoes a nutritious makeover with these roasted garlic cauliflower faux-tatoes.
Roasted Garlic Faux-tatoes
Yield 6
Ingredients
- 1 large head of cauliflower, leaves removed, florets and core cut into 2” pieces
- 5 large cloves garlic, peeled
- 2 teaspoons sea salt, plus more to taste
- 2 tablespoons organic butter or ghee
- 3 sprigs of thyme, minced (leaves only)
- ¼ teaspoon freshly ground nutmeg
- Fresh ground pepper to taste
Instructions
- Fill a large stock pot with two inches of water and place a steamer basket inside. Cover pot with a tight fitting lid and bring to a boil.
- When water reaches a boil add cauliflower and garlic cloves. Steam until soft, approximately 8 minutes (make sure they’re fork tender). Remove from heat and drain cauliflower and garlic in a colander.
- When the cauliflower and garlic has fully drained, place them in a food processor or high speed blender with butter, thyme, nutmeg and fresh pepper. Process everything until very smooth. Add sea salt and pepper to taste. Enjoy!
