How to make grilled pizza & infuse it with CBD

When my boys were growing up, we had a holiday tradition of making CBD-infused grilled pizzas. It’s a favorite memory of mine (my taste buds enjoyed it, as well) and the nights we did it delighted everyone.

Grilled pizzas deliver a crispy, flavorful crust, while the CBD enhances the flavor experience and leaves everyone satisfied.

One of the best things about grilling pizzas is that the dough can be grilled in advance, stored in the fridge or freezer and pulled out when needed. You can make your own dough or save time by using store-bought dough — I confess, I often use ones from a local market or Trader Joe’s.

Even better, grilled pizzas are easily customizable. Everyone in the family can make their own culinary delight with the toppings they enjoy the most, be it basic (there’s nothing wrong with cheese and meat) or a little fancy — think goat cheese, grilled asparagus, sautéed shitake mushrooms, shallots with thyme, and fresh basil. My favorite combos have always been:

  • Chicken with BBQ sauce, Colby and Jack cheese and ranch dressing
  • Shrimp with pesto sauce, fresh mozzarella and sliced tomatoes
  • Fig jam, mascarpone cheese and sliced green apples with a balsamic reduction.

But the most important part of this dish is the CBD, right? You can finish your own with as much or as little CBD oil as you want. The more CBD, the more relaxed you’ll feel post-grilled pizza. Just sayin’.

To make CBD-infused pizzas, you’ll need:

  • 1 pound of your favorite pizza dough kept at room temperature
  • 1/2 cup light olive oil
  • Kosher salt and fresh cracked pepper
  • Toppings of your choice: pizza sauce, mozzarella, goat cheese, sausage, pepperoni, grilled veg, leftover chicken — get creative!
  • Unflavored CBD oil to finish, we recommend about 10mg per personal pizza if you’re new to CBD infusions

To make these pizzas, start by sprinkling the back of a sheet pan or cookie sheet with olive oil, salt and fresh cracked pepper. Using your hands, spread the dough out into 2 or 4 rectangles. Let rest while you prep the grill.

Make sure your grill is clean and set it to 500-550 degrees Fahrenheit. Use tongs and a folded paper towel to rub the grates with olive oil.

Carefully slide the dough directly onto the grates. Close the grill and cook for 2-3 minutes. Using tongs, gently lift the dough to check the bottom. It should have light brown grill marks.

Using your tongs, flip the pizza dough grilled side-up, grill for another minute, then pull it off the grill and place it back onto your sheet pan to add toppings. Let the dough cool a bit before adding toppings so that it’s easier to handle.

Brush pizza with olive oil and add desired sauce and toppings.

When finished, slide the pizza back onto the grill, then close and cook for another 2-3 minutes until the toppings have melted. (You can also finish the pizzas in a 500 degrees Fahrenheit oven for 5 minutes if you’d prefer.)

Using your tongs, lift the crust to check the bottom. If the dough is browning but the toppings still need more time, lower the heat and let cook for an additional 2 minutes.

Transfer pizza to cutting board. Let rest for 2 minutes, then sprinkle with desired herbs and shaved Parmesan.

Add the CBD oil! 10mg per person is a standard serving. You can add more depending on your personal preference, but we recommend starting with 10mg. Drizzle your oil to evenly distribute on the pizza.

CBD Grilled Pizza

9. Add the CBD oil! Drizzle your oil to evenly distribute on the pizza.
