Homemade from Scratch Green Bean Casserole

Ingredients

  • 16 ounces fresh green beans (or frozen.. but please not canned) ends trimmed
  • 8 ounce package crimini mushrooms, sliced
  • 1/2 + 1 c. chicken/vegetable stock
  • 1/4 c. white wine
  • 1/4 c. flour
  • 1/2 onion, minced
  • 6 cloves garlic, minced
  • 2 Tbsp salted grassfed butter
  • 1 Tbsp bacon fat
  • 1 Tbsp olive oil
  • 1/2-3/4 c. coconut milk
  • 3 sprigs of thyme
  • 3 shakes red pepper flakes
  • 1/2 tsp sea salt
  • 1/4 + 1/8 tsp freshly ground black pepper
  • 1/8 tsp freshly grated nutmeg
  • 1/4 c. flour
  • 1/2 c. panko bread crumbs
  • 1/4 c. parmesan cheese
  • 2-3 Tbsp salted grassfed butter, cubed
  • 1/3 c. grapeseed oil for frying
  • 2 large shallots, sliced
  • 1/4 -1/2 cup flour for tossing, optional
