Ingredients

  • 1 head romaine lettuce, washed and chopped into bite-size pieces
  • 1 orange, seedless and sectioned
  • 1/2 cup blueberries
  • 1/2 cup blackberries
  • 1/2 cup raspberries
  • 4 tablespoons crumbled feta cheese
  • 4 tablespoons sliced almonds
  • 1 teaspoon Dijon mustard
  • 1 tablespoon honey
  • 2 tablespoons balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons Meyer lemon juice
  • Salt and pepper to taste
  • 1 Meyer lemon, peeled and sliced

Instructions

  1. Divide romaine lettuce, orange sections, blueberries, blackberries, raspberries, feta cheese and almonds between two plates or bowls.
  2. Place mustard, honey, balsamic vinegar, olive oil, lemon juice, salt and pepper into glass cup. Whisk until blended.
  3. Just prior to serving, pour vinaigrette over salad.
  4. Garnish with lemon slices.
  5. Serve.
