Warm up milk

Place milk in a small saucepan over medium heat. Scald milk by bringing just to a boil, and then allow to cool to lukewarm. Use a food thermometer to check the temperature; 110F degrees is the perfect temperature.

Pour honey over yeast and milk

Pour tempered milk in a medium bowl, add yeast and honey and mix well. Allow to rest for 5-10 minutes (the yeast will rise up and bloom).

Mix the yeast mixture together

Place the yeast mixture in a stand mixer with a bread hook.

Add melted butter, egg and flour

Before you start kneading the flour mixture, add three tablespoons melted butter, egg and two cups of flour. Mix on low until smooth. Then slowly add the remaining flour until dough comes together.

Add salt and keep mixing

Make sure the mixer is on low and knead for eight minutes.

Get out the cutting board

Flour a work surface and turn out dough. Knead for a few more minutes by hand.

Allow time for the dough to rise

Spray a large bowl with cooking spray and place dough in bowl. Cover with a light towel and allow to rise in a warm place until doubled (about one hour).

Tip: Put the bowl in a microwave with the door closed and the microwave light on. The dough will rise more quickly from the warmth of the light.

Pour honey over powdered sugar

While you’re waiting for the dough, make the honey, cinnamon dip. First step, combined butter, powdered sugar and honey in one bowl.

Blend together

With a hand mixer, blend all ingredients until smooth and creamy.

Return to the dough and start rolling

Punch it down and turn out onto a floured work surface. Then roll the dough into a rectangle, about 1/2 inch thick. Fold over and gently roll to seal together.

Cut into squares

Cut dough into 22-24 squares and place on prepared sheets about an inch apart.

Cover the dough with cloth

Place the doughy rolls on two trays and cover them with a light towel. Don’t put them in the oven yet! Allow the rolls to rise until almost doubled in size (about 40 minutes).

Bake the rolls

Remove the light towels and pop the trays in the oven and let them bake for 12-15 minutes or until golden brown.

Brush the baked rolls with melted butter

Brush tops of rolls with remaining melted butter immediately after removing them from the oven.

  • 2-1/4 teaspoons yeast (or 1 packet)
  • 1-1/4 cups milk
  • 1/4 cup honey
  • 4 tablespoons melted butter, divided into 3 tablespoons and 1 tablespoon
  • 1 large egg
  • 1 teaspoon Kosher salt
  • 4 cups flour, divided into 2 cups and 2 cups

  • 8 tablespoons (1 stick) salted butter at room temperature
  • 1/2 cup powdered sugar
  • 1/2 cup honey
  • 1 teaspoon cinnamon

  15. Brush tops of rolls with remaining melted butter immediately after removing them from the oven.
