Summertime is a great season for zucchini. You can fry it, roast it, sauté it… but have you ever made “zoodles,” or zucchini noodles with it? It’s a healthy and delicious alternative to pasta! You can “shred” zucchini into “spaghetti noodle shapes” with a julienne peeler or a spiral slicer, but I’ve even seen it done with a fork.
Zucchini noodles are awesome because they really hold sauce well. This recipe for Zucchini Pasta with Fava Beans and Harissa Sauce is hearty and filling even though it’s vegetarian. And while it calls for fava beans, if you can’t find them or aren’t a fan, you can use peas, fresh green beans, or even sugar snap peas.
