Roasted Pork Tenderloin with Apples

  1. Preheat the oven to 425 degrees F.
  2. Heat 1 tbsp vegetable oil in a large cast iron or oven-proof skillet.
  3. Rub the tenderloin with the remaining tbsp of vegetable oil and salt.
  4. Brown all sides of the tenderloin in the skillet for about 8 minutes, then remove and set aside on a cutting board.
  5. Add the onion and sliced apples and cook for 5 minutes, stirring occasionally. Add half of the rosemary and thyme.
  6. Brush the tenderloin with the Dijon mustard and sprinkle the pepper and the remaining herbs over it evenly.
  7. Add the tenderloin back to the skillet on top of the onions and apples, and immediately transfer to the oven.
  8. Bake for 10 to 12 minutes, until the internal temperature of the tenderloin is 150 degrees F.
  9. Remove from the oven and let rest 5 minutes.
  10. Arrange the apples and onions on a platter, and place the pork tenderloin in the center on the top when ready to serve.
