Roasted Pork Tenderloin with Apples

Ingredients
- 1-lb pork tenderloin
- 2 tbsp vegetable oil
- 1/2 tsp salt
- 1/4 tsp black ground pepper
- 1 onion, chopped
- 2 McIntosh apples, cored and sliced
- 1 tbsp Dijon mustard
- 1/2 tsp thyme
- 1/2 tsp rosemary
Instructions
- Preheat the oven to 425 degrees F.
- Heat 1 tbsp vegetable oil in a large cast iron or oven-proof skillet.
- Rub the tenderloin with the remaining tbsp of vegetable oil and salt.
- Brown all sides of the tenderloin in the skillet for about 8 minutes, then remove and set aside on a cutting board.
- Add the onion and sliced apples and cook for 5 minutes, stirring occasionally. Add half of the rosemary and thyme.
- Brush the tenderloin with the Dijon mustard and sprinkle the pepper and the remaining herbs over it evenly.
- Add the tenderloin back to the skillet on top of the onions and apples, and immediately transfer to the oven.
- Bake for 10 to 12 minutes, until the internal temperature of the tenderloin is 150 degrees F.
- Remove from the oven and let rest 5 minutes.
- Arrange the apples and onions on a platter, and place the pork tenderloin in the center on the top when ready to serve.
