Roasted lemon Parmesan green beans
Yield 4 servings
Ingredients
- 1 pound green beans, trimmed
- 1 tablespoon olive oil
- Juice from 1/2 large lemon
- Salt and black pepper, to taste
- 1/3 cup grated Parmesan Cheese
Instructions
- Preheat oven to 400F.
- Drizzle beans with olive oil and lemon juice. Season with salt and pepper to taste. Toss.
- Line sheet pan with parchment. Add green beans.
- Roast in oven for 10 minutes.
- Remove from oven and sprinkle with Parmesan. Toss and return to oven.
- Cook for an additional 7 minutes or until beans are tender but still crisp and cheese is melted.
- Serve immediately.
