This roasted lemon Parmesan green bean recipe, inspired by Two Peas and Their Pod, is no exception. Fill a bag at the farmers market with a pound of fresh, glorious green beans, and you’ll be ready for a simple, tasty side dish for your next dinner.

Green beans are some of nature’s most generous gifts to the taste buds. However, their delightfully fresh flavor often gets lost in the dishes they’re added to — such as the traditional American favorite, green bean casseroles. Not so with this recipe, though! Using only three ingredients, it plays up the pure taste of the green bean, rather than burying it among other flavors.

The recipe’s effortless, too, and fits into just about any meal, whether it’s for a holiday feast, backyard barbecue or a Sunday dinner on the patio.

In less than 20 minutes, you can create a dish that tastes as if you put far more effort into it than you actually did. Just toss the green beans with olive oil, lemon juice, salt and pepper, and throw them in the oven. A sprinkle of Parmesan then a few more minutes in the oven, and they’re ready.

Once you bite into these roasted, still-crispy, slightly-tangy green beans, they’ll become a frequent dish at your dinner table. Plus, they’re healthy for you — meaning you can nosh your way through the entire pan without an ounce of guilt.

Roasted lemon Parmesan green beans

Yield 4 servings

Ingredients

  • 1 pound green beans, trimmed
  • 1 tablespoon olive oil
  • Juice from 1/2 large lemon
  • Salt and black pepper, to taste
  • 1/3 cup grated Parmesan Cheese

Instructions

  1. Preheat oven to 400F.
  2. Drizzle beans with olive oil and lemon juice. Season with salt and pepper to taste. Toss.
  3. Line sheet pan with parchment. Add green beans.
  4. Roast in oven for 10 minutes.
  5. Remove from oven and sprinkle with Parmesan. Toss and return to oven.
  6. Cook for an additional 7 minutes or until beans are tender but still crisp and cheese is melted.
  7. Serve immediately.
