Roasted lemon Parmesan green beans

Yield 4 servings

Ingredients

  • 1 pound green beans, trimmed
  • 1 tablespoon olive oil
  • Juice from 1/2 large lemon
  • Salt and black pepper, to taste
  • 1/3 cup grated Parmesan Cheese

Instructions

  1. Preheat oven to 400F.
  2. Drizzle beans with olive oil and lemon juice. Season with salt and pepper to taste. Toss.
  3. Line sheet pan with parchment. Add green beans.
  4. Roast in oven for 10 minutes.
  5. Remove from oven and sprinkle with Parmesan. Toss and return to oven.
  6. Cook for an additional 7 minutes or until beans are tender but still crisp and cheese is melted.
  7. Serve immediately.
