Monique’s Creamy baked macaroni and cheese

Macaroni and cheese is just as wildly popular among lunchtime play-date guests as it is among the teenaged crowd. In fact, most adults never outgrow that love of warm pasta covered in a delicious, cheesy sauce. And while most kids are perfectly happy eating noodles covered in orange powder from a box, there’s no substitute for that made-from-scratch taste that comes only from fresh ingredients.

Monique’s recipe is the good stuff, like Grandma made — with creamy half-and-half, butter and a mixture of real cheeses that creates gooey, cheesy spoonsful of heaven. It’s about as comfortable as comfort food can get.

Monique uses Colby jack for its ultimate melty goodness and adds smoked cheddar for a gourmet taste that even the most discerning cheese lover will appreciate. She then sprinkles it with more cheese and bakes it until the topping reaches an irresistible golden brown.

Ingredients

  • 3 cups elbow macaroni, uncooked
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup half-and-half, warmed
  • 16 ounces Colby Jack cheese, shredded and divided
  • 1/2 cup smoked cheddar cheese, shredded and divided
  • 1-1/2 cups whole milk
  • 2 eggs, slightly beaten
  • Salt and pepper
