Leftover turkey shepherd's pie
Yield 4-6 servings
Ingredients
- 2 tablespoons butter
- 1 onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 2 cups shredded turkey meat
- 1 (14.5-ounce) can crushed tomatoes (1-1/2 cups)
- 1 teaspoon Frank's Red Hot hot sauce
- 1-1/2 tablespoons Italian seasoning
- 3 tablespoons fresh basil, cut in chiffonade
- Salt and freshly ground black pepper to taste
- 2 cups your favorite mashed potatoes
- 3/4 cup shredded mozzarella cheese
- 1/4 cup shredded Parmesan cheese
- Fresh parsley
Instructions
- Preheat oven to 375F. Place a baking dish on a parchment-lined baking tray.
- In a large skillet over medium-high heat, melt the butter. Add onion, green bell pepper and garlic. Cook, stirring often, until onion is tender and translucent.
- Add shredded turkey, crushed tomatoes and hot sauce. Season with salt and pepper. Cook, stirring occasionally, for five minutes. Stir in Italian seasoning and fresh basil.
- Pour turkey mixture into a baking dish. Cover mixture with the mashed potatoes, using a spatula to spread the potatoes to completely cover the turkey mixture.
- Evenly sprinkle shredded mozzarella and Parmesan cheeses over the mashed potatoes.
- Bake for 30 minutes, or until cheese is melted and bubbly.
- Garnish with fresh parsley. Serve hot.
