Leftover turkey shepherd's pie

Yield 4-6 servings

  1. Preheat oven to 375F. Place a baking dish on a parchment-lined baking tray.
  2. In a large skillet over medium-high heat, melt the butter. Add onion, green bell pepper and garlic. Cook, stirring often, until onion is tender and translucent.
  3. Add shredded turkey, crushed tomatoes and hot sauce. Season with salt and pepper. Cook, stirring occasionally, for five minutes. Stir in Italian seasoning and fresh basil.
  4. Pour turkey mixture into a baking dish. Cover mixture with the mashed potatoes, using a spatula to spread the potatoes to completely cover the turkey mixture.
  5. Evenly sprinkle shredded mozzarella and Parmesan cheeses over the mashed potatoes.
  6. Bake for 30 minutes, or until cheese is melted and bubbly.
  7. Garnish with fresh parsley. Serve hot.
