Vegan whipped cream
Yield 1 cup
- 1 can coconut cream, refrigerated
- 2 tablespoons powdered sugar (more or less, to taste)
- 1 teaspoon vanilla
- Pour thick, creamy part of can contents into large bowl. Set aside liquid for another recipe.
- Using hand or stand mixer, whip coconut cream, adding sweetener and vanilla to taste, until mixture forms stiff peaks.
- Serve immediately.
Coconut cream should be super-thick right out of the can. If not, refrigerate the can overnight.
