When the weather turns cool, nothing tastes quite as satisfying as your favorite roasted meat, served with seasoned veggies and a big heap of whipped potatoes. Monique’s recipe for this comfort classic features a few decadent additions to tantalize your taste buds.

Cream cheese mashed potatoes

Monique first infuses the potatoes with flavor by boiling them in chicken broth until they reach peak tenderness. Then, she mashes them by hand until they’re super-smooth and creamy. Then comes lots of butter, half–and-half and cream cheese for a creamy goodness overload.

To finish off this picture-perfect side, she allows a few golden pats of butter to melt on top. It’s a thing of beauty.

Ingredients

  • 4 large russet potatoes, washed and scrubbed
  • 2-1/2 cups chicken broth (may need more)
  • 4 tablespoons butter, plus more (at room temperature)
  • 4 ounces cream cheese (at room temperature)
  • 1/2 cup half-and-half, plus more (at room temperature)
