The best extra crispy fried pickles with Cajun dipping sauce

Cajun dipping sauce

  1. In a small bowl, mix mayonnaise, sour cream, lemon juice, Cajun spice and red onion together.
  2. Cover and refrigerate until ready to serve.

Fried pickles

  1. Drain the pickles and slice 1/4 -inch thick.
  2. Pat pickles dry with paper towels and allow to air dry until ready to fry.
  3. In a medium-sized bowl, whisk together flour, baking powder, salt, pepper, and paprika.
  4. Coat each pickle in the flour mixture and set aside.
  5. Into the remaining flour mixture, add the milk, egg and a pinch of salt to make a batter. Mix until no lumps remain.
  6. Place breadcrumbs in a small bowl.
  7. Coat each pickle in the batter and shake away the excess.
  8. Dip each pickle in the breadcrumbs.
  9. In a deep pot, heat about three inches of vegetable oil to 350F.
  10. Fry the pickles in batches until brown and crispy.
  11. Remove fried pickles from the oil with a slotted heat-safe spoon or a spider and set them on paper towels to soak up excess oil.
  12. Serve fried pickles hot with the Cajun dipping sauce.
