Orange cranberry French toast bake

Instructions

  1. Lightly coat 9-by-13-inch baking dish.
  2. Microplane orange zest of one orange. Set aside.
  3. Peel and slice two oranges. Set aside.
  4. Unwrap and crumble goat cheese using sharp knife. Set aside.
  5. Cut croissants in half.
  6. Arrange 12 croissant halves evenly in baking dish. Top with half of orange slices, cranberries and goat cheese, distributing evenly. 
  7. Top with remaining 12 croissant halves, and repeat with remaining orange slices, cranberries and goat cheese.
  8. In large bowl, whisk eggs, milk, maple syrup, orange zest, vanilla and salt. 
  9. Pour mixture evenly over pan. Cover with foil and place in refrigerator for at least 2 hours, up to overnight.
  10. Remove baking dish from refrigerator; let stand for 30 minutes. 
  11. Preheat oven to 350 F. 
  12. Bake, covered, for 40 minutes. Remove foil and bake for an additional 20-25 minutes, until center is firm.
  13. Dust with powdered sugar and serve.
