Beet, Apple and Orange Salad

Yield 4 -6

Ingredients

  • 2 gala apples, cored and chopped
  • 2 oranges, peeled and chopped
  • 4 beets
  • 1 tbsp white vinegar
  • 1/4 cup + 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1/2 tsp brown sugar
  • 1/4 cup chopped walnuts

Instructions

  1. Bring a pot of water and 1 tbsp white vinegar to boil.
  2. Add the beets to the boiling water and cook for 35 minutes, until tender.
  3. Allow the beets to cool to touch, then peel and chop them.
  4. Add the beets, apples and oranges to a bowl.
  5. In a separate bowl, mix together the olive oil, balsamic vinegar, and brown sugar.
  6. Add the dressing to the salad and toss well.
  7. Sprinkle walnuts on top of the salad when ready to serve.
