No-sugar-added apple pie overnight oats

A recipe inspired by Budget Bytes

Simple, comforting and healthier than apple pie, these no-sugar added apple pie overnight oats — inspired by an awesome recipe over at Budget Bytes — are a tasty way to start your day.

You know oatmeal is a boon for your health, but the ingredients you add — or don’t — make oats even better for you. Our apple pie overnight oats are studded with nutrient-rich walnuts and currants and spiced with cinnamon, ginger and cloves — spices with anti-inflammatory properties and other health benefits. Unsweetened applesauce gives this delish dish moisture and a natural sweetness, while milk lends creaminess.

Notice something missing from the ingredient list? That’s right: These overnight oats have no sugar added, not even in the applesauce. You won’t even notice, especially if you use a good-quality natural applesauce that is slightly chunky (chunks mean real apples!) and not watery in texture. If you’re feeling ambitious, make your own unsweetened applesauce with your favorite type of sweet-tart apple. Either way, the better the applesauce, the better your overnight oats.

Prep for this dish takes mere minutes! In each jar, layer oats, spices, walnuts and currants. Pour in your choice of milk and top with the applesauce. Put lids on your jars and place them in the refrigerator for at least eight hours so the oats can absorb the liquid, and the spices can infuse into the mix. When you’re ready to eat, simply remove the lid and dig in with a spoon.

Finally, the right ingredients really do matter. For this recipe, you must use old-fashioned rolled oats or steel-cut oats. Avoid instant oats, because they become instant goo.

No-sugar-added apple pie overnight oats

Yield 4 servings

Ingredients

  • 1-1/3 cups old-fashioned rolled oats
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 cup chopped walnuts
  • 1/4 cup dried currants
  • 2 cups milk, soymilk, almond milk or coconut milk
  • 1-1/3 cups unsweetened applesauce

Instructions

  1. Remove lids from four 12-ounce mason jars.
  2. Add ingredients in this order to each jar: 1/3 cup oats, 1/8 teaspoon cinnamon, 1/16 teaspoon ginger, 1/16 teaspoon cloves, 2 tablespoons walnuts, 1 tablespoon currants and 1/2 cup milk. Top each with 1/3 cup applesauce.
  3. Place lids on mason jars and refrigerate at least overnight or up to 5 days.
  4. When ready to eat, dig in with a spoon, or empty the contents of the jar into a bowl to serve.

Notes

Though you can store them in the refrigerator for up to five days, the oats will continue to soften. If you prefer creamy oats, you'll enjoy digging into them after a couple of days.
