Jessica Gavin’s Honey cornbread muffins

This recipe works well to feed a large crowd during Thanksgiving as people can just grab a muffin and dig in right away. These cornbread muffins take about 30 minutes to bake up in the oven before serving. I try to time it right so that that they are nice and warm at the dinner table.

This recipe uses baking powder in the batter to rapidly rise and bake, creating the perfect domed tops. The muffins are so delicious that your guests will devour them faster than it took to make!

Each cornbread muffin is packed with sticky sweet honey. This makes the flavor even more delicious and the cake texture moist. Honey is a humectant, which means that it attracts water and keeps the cakes from becoming too dry.

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour or gluten-free flour
  • 1 tablespoon baking powder
  • 1/2 cup granulated sugar
  • 1 teaspoon salt
  • 1 cup reduced-fat milk or whole milk
  • 2 large eggs
  • 4 tablespoons unsalted butter melted
  • 1/2 cup honey
  • 3/4 cup yellow corn kernels
