Add water and agave nectar into a saucepan

First, make a simple syrup using agave nectar, also called agave syrup, a sweetener made from the agave plant. Agave nectar is sweeter than granulated white sugar and can be substituted for sugar or honey in many recipes. To make a simple syrup, combine the agave nectar and water in a saucepan over medium heat. Warm, stirring often, until the agave and water are combined. This will be the sweetener for your vegan margarita.

Next up? The rim blend. On a small plate, mix together coconut sugar, sea salt, and ground cinnamon. Use the lime wedge to moisten the rim of a cocktail glass. Turn the glass upside down and, at a 45-degree angle, roll the moist rim in the sugar, salt and cinnamon mixture. Carefully fill this glass with ice without knocking off the rim blend and set it aside.

Vegan spiced apple margarita

Yield 1 serving

Ingredients

Agave nectar simple syrup

  • 1/4 cup agave nectar
  • 1/4 cup water

Rim blend

  • 1 teaspoon coconut sugar
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground Vietnamese cinnamon
  • Lime wedge

Margarita

  • 2 ounces reposado tequila
  • 1-1/2 to 2 ounces apple juice or apple cider
  • 3/4 ounce fresh lime juice
  • 3/4 teaspoon agave simple syrup (see recipe below)
  • Dash ground cinnamon
  • Garnish
  • 1 star of anise
  • Thin slice of apple

Instructions

Agave simple syrup

  1. In a small saucepan over medium heat, combine the water and agave nectar.
  2. Warm, stirring frequently, just until the water and agave are completely combined.
  3. Remove the saucepan from heat and set it aside to cool.

Rim blend

  1. On a small plate, use a fork to blend the sugar, salt and cinnamon together.
  2. Run a wedge of lime around the top of a glass, then turn the glass down at a 45-degree angle and roll the top of the glass through the sugar, salt and cinnamon blend to coat the rim.
  3. Fill the glass with ice and set aside.

Margarita

  1. Fill a cocktail shaker with ice.
  2. Pour in tequila, apple juice or cider, lime juice, agave simple syrup and cinnamon.
  3. Put the lid on the shaker and shake the cocktail vigorously for about 20 seconds.
  4. Strain the cocktail into the prepared glass.
  5. Garnish with a star of anise and a fresh apple slice.
