There is nothing like the warm, sweet smell of waffles in the morning! Waffles are a staple of the breakfast table and have been around since the 16th century. They are one of the oldest recognized breakfast foods and are enjoyed all over the world!

Today we are making pumpkin waffles. Pumpkin tends to be a fall fave flave, but there doesn’t need to be a chill in the air to enjoy the savory flavor of pumpkin.

Top these pumpkin waffles with fresh banana slices and candied pecans for a sweet and filling variation. Drizzle with cream cheese glaze and add a handful of pomegranate seeds for a fruity touch. Or just toss in a few chocolate chips for a melty, sweet treat the kids will go crazy for.

If you are feeling really adventurous, how about some savory sage fried chicken and pumpkin waffles?! Or top with some coconut gelato and a dollop of whipped cream for dessert with a twist!

Ingredients

  • 3 cups waffle mix
  • ¼ cup brown sugar
  • 1 tps cinnamon
  • ½ tps nutmeg
  • 2 eggs
  • 1 cup pumpkin puree
  • 1 cup milk
  • ¼ cup oil

Instructions

  1. Heat and lightly grease a waffle iron.
  2. Mix all ingredients together in a large mixing bowl and whisk together until incorporated.
  3. Pour into hot waffle iron. Cook waffles for 3-4 minutes until golden brown (or according to waffle iron directions).
  4. Top with your favorite go-to waffle toppings or with our suggestions above!
