Healthy vegan chocolate pecan pie

Yield 6–8 servings



  1. Preheat oven to 350F.
  2. Place vanilla, salt, cornstarch, maple syrup, sugar, tofu, molasses and cocoa powder in blender (or food processor).
  3. Blend until very smooth.
  4. Add pecans and pulse once.
  5. Pour filling into prepared pie crust, and top with whole pecans laid out in three circles.
  6. Bake in preheated oven at 350F for 43 minutes.
  7. Remove from oven and let cool, then place in refrigerator to chill.
  8. Serve with whipped cream.
