This chargrilled oysters recipe is so easy and lip-smacking good

What makes these chargrilled oysters so tasty?

Chef Rusty  starts with a lip-smacking delicious garlic sauce made with butter, garlic, lemon juice, parsley and three types of pepper — black, white, and cayenne. After the sauce is hot and bubbling, he splashes it with white wine (whatever white wine you have in your fridge will work).

Fry ’em up

Chef Rusty cooks oysters in the half-shell on the hottest part of the grill, spooning them with the garlicky oyster sauce. Then he generously sprinkles each oyster with a mixture of parsley and freshly grated Parmesan and Romano cheeses. When the cheese is melted and a nice golden brown, the oysters are ready to plate.

Chef Rusty's chargrilled oysters

Ingredients

  • 1/4 white wine
  • 2 sticks unsalted butter
  • 1 tablespoon fine ground black pepper
  • 1 tablespoon white pepper
  • 1 tablespoon kosher salt
  • 1 teaspoon lemon juice
  • 1 teaspoon granulated garlic
  • Fresh garlic
  • 3 tablespoons cayenne pepper
  • Fresh Parmesan cheese, grated
  • Fresh Romano cheese, grated
  • Fresh parsley
  • Toasted French bread

Instructions

  1. Add fresh garlic to butter and melt on stove (do not brown).
  2. Add salt, granulated garlic, white pepper and black pepper.
  3. Turn down heat.
  4. Add cayenne pepper.
  5. Add lemon juice.
  6. Begin cooking oysters on the hottest part of the grill.
  7. Mix fresh parsley into garlic-butter sauce and stir over low heat until sauce bubbles.
  8. Add white wine.
  9. Once oysters are cooked, spoon garlic-butter sauce over top (it might flame, but this is okay).
  10. Mix fresh Parmesan, Romano and parsley; sprinkle generously over oysters.
  11. Plate oysters and spoon more garlic-butter sauce over top.
  12. Add toasted French bread to plate and serve.
  13. Tip: Consider making extra garlic-butter sauce to serve on the side.
