Prepare the salmon

Set the salmon fillet skin-side down on the foil. Brush the salmon with olive oil and maple syrup. Season with salt and pepper. Sprinkle with the minced fresh rosemary. Lay the lemon slices on top of the salmon.

Fold up the foil for grilling

Instead of completely wrapping the foil around the salmon before it goes on the grill, we create walls with the foil by folding up the sides and corners. This prevents the juices of the salmon from spilling out onto the flame and keeps the salmon bathed in them as it cooks.

Grill the salmon

Slide the salmon onto the grill. Close the lid and grill for 8 to 10 minutes or until the internal temperature of the fish registers 145°F. The salmon will flake when pressed with the back of a fork. Set the salmon aside.

Grill the lemons

Cooking lemons on the grill gives them a smoky flavor and makes them easier to juice. Set the lemons cut-side down directly on the grill and cook for 3 to 4 minutes or until they are lightly charred.

Squeeze the grilled lemons over the salmon

Squeeze the lemon juice all over the top of the salmon and garnish with extra minced rosemary. Serve hot.

Grilled salmon with maple syrup & rosemary

Yield 6 servings

Ingredients

  • 1 large salmon fillet
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 teaspoons finely minced rosemary leaves, plus more for garnish
  • 3 whole lemons, 1 thinly sliced, 2 cut in half

Instructions

  1. Preheat the grill to medium.
  2. Line a baking sheet with a large sheet of aluminum foil.
  3. Lay the salmon fillet, skin side down, on the foil.
  4. Generously brush olive oil all over the salmon flesh.
  5. Brush the salmon with maple syrup.
  6. Season the fish with salt and pepper.
  7. Sprinkle the minced rosemary on top.
  8. Arrange the lemon slices on top of the salmon.
  9. Fold the foil up on the sides to create walls to keep the juices from spilling out.
  10. Keeping the foil under and around the salmon, carefully slide the salmon onto the hot grill.
  11. Close the grill lid and grill salmon for 8 to 10 minutes, or until internal temperature is 145°F. Carefully remove the salmon from the grill and set aside.
  12. Place the lemon halves directly on the hot grill and grill for 3 to 4 minutes or until the flesh is lightly charred.
  13. Squeeze the grilled lemons over the top of the salmon and garnish with a sprinkling of minced fresh rosemary.
  14. Serve hot.
