CBD Jell-O shots will take your party to the next level

Who says Jell-O shots are just for wild college kids and out-of-control, all-night parties? I, friends, am here to change that.

As you all know, CBD is finally getting its time in the limelight. After first being discovered in 1940, the medicinal herb attracted popularity as quickly as it did skepticism. In 2018, a clinical research study found that cannabidiol was useful for easing anxiety, cognition problems, movement disorders and pain, and the world is finally (and rightfully) starting to come around to incorporating it into everyday life. Texas recently legalized the sale of it, and Kroger announced it plans to sell it in Indiana stores in coming months.

Now that CBD is becoming a mainstay, it’s time to incorporate it into your recipes! You may have seen my CBD-infused grilled pizza, twice-baked potatoes or guacamole. But since summer is officially here, it’s time to have a little more fun. We’re bringing Jell-O shots back.

When cooking or baking with CBD, I suggest using a brand called Select CBD. I can vouch for it because I use it on the regular. This CBD variety can only be bought in dispensaries, though. If you don’t have access to one, I urge you to exercise caution when buying CBD — there are a lot of imposters out there. Look for a CBD oil with a high percentage of CBD (hemp oil usually isn’t sufficient) and buy from a reputable establishment. Read reviews and be mindful when choosing products to put in your body, especially when using it for healing or pain moderation. Spoiler: I’ll be releasing my own brand of CBD products this fall under the name The Cannabis Contessa, but more on that later this year.

Anyway, back to this recipe. Spiked with CBD, these non-alcoholic Jell-O “shots” can be an easy way to get your daily dose of cannabidiol. Plus, summer isn’t really summer without a little lemonade. This recipe is a perfect palate cleanser for mid-meal, or a refreshing and fun way to end a night.

You’ll need lemonade (I suggest using an organic variety without sugar), a 6-ounce package of instant strawberry Jell-O, 120 milligrams of water-soluble CBD, and lemons for presentation.

First, heat the water in a small saucepan until it reaches boiling point. Pour the contents of the Jell-O into a large glass measuring cup or ladle. Whisk the Jell-O powder into the water, stirring until the powder is completely dissolved. Now add your CBD and stir that in until it, too, is dissolved. Pour in your chilled cup of lemonade and whisk.

Now is when you set up the presentation part. I love making my Jell-O shots look like slices of lemon. To do this, cut lemons in half. Use a spoon to remove the fruit of the lemons and place them aside (or just throw them out, you won’t be needing them).

Be sure to keep the U-shaped lemon peels intact, and place them into a cupcake or muffin pan. Fill each half-lemon peel with the Jell-O mixture and leave them in the fridge for about 6 hours. When you’re ready to serve your non-alcoholic CBD-infused Jell-O shots, cut the half-lemon peels into quarters and enjoy!

Strawberry lemonade CBD Jell-O Shots

Ingredients

  • 1 cup lemonade
  • One 6-ounce package instant strawberry Jell-O
  • 1 cup ice-cold water
  • 6 lemons, halved lengthwise from stem to end
  • 120 milligrams water-soluble CBD for 6 lemons (That's 20 milligrams per lemon and 5 milligrams per quartered wedge.)

Instructions

  1. In a small saucepan, heat water until it boils.
  2. Put contents of Jell-O into a large glass-measuring cup for easy pour. When water boils, whisk in the Jell-O until powder is completely dissolved.
  3. Whisk in CBD until dissolved.
  4. Add in cold lemonade and whisk.
  5. Cut lemons in half. Using a grapefruit spoon, scoop out the fruit of the lemons, leaving the peel intact.
  6. Place empty lids into a cupcake tin.
  7. Fill lemon peel wells with Jell-O mixture. Place cupcake pan in refrigerator and let set, for about 6 hours.
  8. Cut lemons in half so they look like quarter slices of lemons and serve.
